Lemon Thyme Bread
Serves: 10
  • Vegetable oil
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 large egg
  • ½ cup whole milk
  • ½ cup sour cream
  • 1¾ cup flour
  • 2 tablespoons thyme, stems removed and leaves minced
  • Zest of a whole lemon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Powdered sugar
  1. Preheat oven to 350 degrees
  2. Oil an 8x4 inch loaf pan and set aside
  3. Cream butter and sugar in a large bowl until light and fluffy
  4. Beat in egg
  5. Add milk and sour cream and combine
  6. In a separate bowl, combine flour, thyme, lemon zest, baking soda and salt
  7. Add flour mixture to wet mixture in three parts. Beat until well combined
  8. Transfer batter to pan
  9. Bake for 50-60 minutes until nice and golden on top and a tooth pick comes out clean
  10. Let cool completely on a wire rack
  11. Remove to serving platter, slice and dust with powdered sugar before serving
